Instructions
Heat a large skillet over medium heat. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear each side for about 5 minutes until golden brown.
Combine BBQ sauce and honey in a separate bowl. Pour the mixture over the seared chicken and let it bubble gently for about 2 minutes.
Stir in long-grain rice and pour in chicken broth, ensuring rice is submerged and chicken is nestled underneath.
Bring to a gentle simmer, cover, and reduce heat to low. Cook undisturbed for about 20 minutes or until rice is tender.
Layer mixed vegetables on top for the last 5 minutes of cooking, covering to steam them perfectly.
