One-Pot Creamy Mushroom Pasta is a rich, savory dish with tender mushrooms and a creamy sauce, all cooked in one pot for an easy dinner.

Ingredients

  • Pasta: Fettuccine, spaghetti, or penne (gluten-free option available)
  • Mushrooms: Fresh white button mushrooms, cremini, or a mix of wild mushrooms
  • Heavy Cream: For a rich and creamy sauce
  • Parmesan Cheese: Freshly grated
  • Garlic: Fresh garlic, minced
  • Onion: Finely chopped
  • Vegetable Broth: For a rich sauce base
  • Olive Oil: For sautéing the garlic, onions, and mushrooms
  • Spinach: Optional, for added nutrition and color

Instructions

  1. Heat olive oil in a large pot, sauté onion and garlic for 2 minutes, then add mushrooms and cook until browned (5–7 minutes).
  2. Add pasta and vegetable broth to the pot. Bring to a simmer and cook until pasta is al dente, 8–10 minutes.
  3. Reduce heat and add heavy cream and Parmesan cheese. Stir until the sauce is creamy. Add more broth if necessary.
  4. Stir in spinach and cook for another 2 minutes until wilted.
  5. Season with salt and pepper to taste, and garnish with extra Parmesan or fresh herbs before serving.
