One Pot Marry Me Butter Beans is a cozy, protein-packed vegetarian dish that’s simple to prepare and full of rich flavors.

  • 2 cans Butter Beans (Drained)
  • 2 tablespoons Olive Oil (Can use any cooking oil)
  • 1 medium Onion, diced (Shallots can be used)
  • 2 cloves Garlic, minced (Fresh preferred, can substitute with garlic powder)
  • 1 Bell Pepper, diced (Can swap with any sweet pepper)
  • 1 14.5 oz can Diced Tomatoes (Fresh tomatoes can be used)
  • 1 teaspoon Smoked Paprika (Regular paprika can substitute)
  • 1 teaspoon Ground Cumin (Coriander can substitute)
  • 1/2 teaspoon Salt (Adjust to taste)
  • 1/4 teaspoon Black Pepper (Adjust to taste)
  • 1 tablespoon Fresh Parsley, chopped (Can use other herbs)
  • 1 cup Vegetable Broth (Can use chicken broth for non-vegetarians)
  • 1 cup Spinach or Kale, optional (Leave out for a simpler dish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add 1 medium diced onion and 1 diced bell pepper and sauté for 5-7 minutes until translucent.
  3. Stir in 2 minced garlic cloves and sauté for 1 minute.
  4. Add 2 cans of drained butter beans, 1 can of diced tomatoes, 1 teaspoon of smoked paprika, 1 teaspoon of ground cumin, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Stir to mix.
  5. Pour in 1 cup of vegetable broth and mix thoroughly to combine.
  6. Cover and let it simmer for 10-15 minutes, stirring occasionally.
  7. Stir in 1 cup of spinach or kale, cover, and simmer for an additional 5 minutes.
  8. Remove from heat and sprinkle 1 tablespoon of freshly chopped parsley on top.
  9. Serve warm, enjoy the creamy texture and flavors.
