A delicious and protein-packed vegan omelette made with tofu, perfect for a savory breakfast or brunch.

Ingredients

  • 1 block (14 oz) firm tofu, drained
  • 2 tbsp nutritional yeast
  • 1/4 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black salt (kala namak)
  • 1 tbsp olive oil
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup spinach, chopped

Instructions

  1. Press tofu for 15 minutes to remove excess water.
  2. In a bowl, crumble tofu and mix with nutritional yeast, turmeric, garlic powder, onion powder, and black salt.
  3. Heat olive oil in a pan over medium heat.
  4. Sauté bell peppers and onions for 3-4 minutes until soft.
  5. Add spinach and cook for another minute.
  6. Spread the tofu mixture evenly in the pan and cook for 5-6 minutes until firm.
  7. Flip carefully and cook for another 3-4 minutes.
  8. Serve hot with your favorite toppings.
