12 oz smoked sausage (sliced into rounds or half-moons)
8 oz pasta (tortellini, penne, or your preferred type)
4 oz Boursin cheese (garlic & fine herbs flavor is ideal)
1 tablespoon olive oil (or butter for extra richness)
Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of pasta water.
Heat olive oil (or butter) in a skillet over medium heat. Add the sliced smoked sausage and cook for 5-7 minutes, or until browned and crispy. Remove from heat.
Reduce heat to low. Add the Boursin cheese and stir until melted and combined with sausage drippings to form a creamy sauce. Add pasta water to adjust the sauce consistency.
Add the drained pasta to the skillet and toss gently to combine. Let it cook on low for 1-2 minutes to absorb the flavors.
Serve immediately, garnished with fresh herbs like parsley or basil. Add a sprinkle of grated Parmesan cheese if desired.
