Strawberry Milkshake Cupcakes are the perfect treat for any occasion, combining the delicious flavors of a strawberry milkshake into a light, fluffy cupcake topped with whipped cream frosting.

  • 1 tsp baking powder

  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk
  • ½ cup butter, melted
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, mashed
  • ½ cup heavy cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Mash the fresh strawberries and fold them into the batter for added flavor and texture.
  5. Spoon the batter into cupcake liners, filling them about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  6. Beat the heavy cream, powdered sugar, and vanilla extract with a hand mixer until stiff peaks form.
  7. Once the cupcakes are cool, frost them generously with the whipped cream frosting and garnish with fresh strawberries.
