Delicious Strawberry Pop Tart Sugar Cookies Recipe to Try!

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup strawberry jam
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter to cut out shapes. Place half of the cutouts on a parchment-lined baking sheet and spoon a small dollop of strawberry jam in the center of each cutout.
  7. Place the remaining cutouts on top of the jam-filled cookies, pressing the edges gently to seal them.
  8. Bake the cookies in the preheated oven for about 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on a wire rack. While they cool, prepare the icing by whisking together the powdered sugar and milk until smooth. Drizzle the icing over the cooled cookies and add sprinkles if desired.
